Why the GFCF Diet?
Casein, which is found in milk, breaks down in the stomach to produce a peptide known as casomorphine. The peptide casomorphine has "morphin"-like or opiod properties. Similar opiod called "Glutemorphins" are formed in the stomach when these children digest gluten. Scientific studies have successfully revealed that these children experience inflammation in the gut caused by gluten, casein, soy, and other foods.
Clinical experience of many DAN (see list) physicians have also identified the GFCF diet as the single most affective actipn you can take on your own to begin to help your child.
