GFCF stands for Gluten Free and Casein Free.

Foods & Additives that contain Gluten and Casein are as follows:

All Dairy Products i.e.
Milk
Half and half
Cream Cheese
Ice Cream
Sour Cream
Cream
Cottage
Yogurt
Hard and soft cheeses

Wheat, Bulgar, Durum, Spelt, Triticale, Oats, Oat Flour, Barley, Barley Flour, Rye, Semolina, Couscous, Wheat Pasta, Baking Powder (unless specified GF), Soy Sauce (unless specified GF), Bouillon cubes or powder, Starch, Vegetable Starch, Sauce mixes (read labels carefully, often contain wheat), Malt, barley malt, Modified food starch (this is in everything!), Rice Syrup (unless specified GF it contains barley enzymes), Spices and herbs (buy only those specified free of wheat fillers) Artificial colors.

*Almost all processed lunchmeats and processed foods contain Gluten and/or Casein.
*Check ingredients in art supplies (paint, glue, playdoh contains gluten)
*Check hand soaps and/or shampoos (most contain gluten)

Remember: If you decide to put your child on the diet, it is extremely important to follow the diet. You will not see the results in your child if he/she is coming into contact with Gluten and/or Casein

 

Why the GFCF Diet? (page)

Casein, which is found in milk, breaks down in the stomach to produce a peptide known as casomorphine. The peptide casomorphine has "morphin"-like or opiod properties. Similar opiod called "Glutemorphins" are formed in the stomach when these children digest gluten. Scientific studies have successfully revealed that these children experience inflammation in the gut caused by gluten, casein, soy, and other foods.
Clinical experience of many DAN (see list) physicians have also identified the GFCF diet as the single most affective actipn you can take on your own to begin to help your child.
